Go with foods that are unlikely to get crushed or go bad, and are calorie-dense. Bottles can be mounted on the bike frame, while bladders fit well into bags and backpacks. Staying well-hydrated is essential, so if there are no water sources on your route, you need to carry approximately 4 litres of water per day, which can get heavy and bulky. It may take some time and multiple trips to get your setup dialled, so start with shorter adventures before setting off on anything epic. Generally speaking, you want the weight on the bike to be balanced front and back, side to side. Ultralight aficionados might only carry a sleeping mat and a down quilt, with minimal clothing, but that is for experienced people only.
You want to get out of your sweaty cycling gear and into some dry warm stuff to be comfortable. Never trust a long-term weather forecast and leave behind essential items. You will need a change of clothes and extra layers, especially if you are in the mountains. The traditional setup of tent, sleeping mat and bag tends to be bulky and heavy, but there are sub-1kg tents available (for a cost). What goes in all those bags? Some people prefer hammocks (which keep you off the cold, damp ground), while some go with just a tarp or bivy sack.
If your bike lacks these, not to worry, there are bags that attach with velcro straps, or you can just attach dry bags with ski straps (especially to MTB bars). Many new touring/gravel/mountain bike frames have lots of eyelets to attach bags and accessories on the fork, top- and downtube. As mentioned above, a wide variety of bikes can be used, but make sure it’s robust enough to withstand some beating, especially under load - you don’t want your 80s road bike frame snapping in the middle of nowhere…
